- 1 whole chicken, about 3 pounds
- 3/4 cup dry sherry
- 2 tbsp salad oil
- 1 tbsp minced fresh gingerroot
- 1 clove garlic, minced
- 2 tsp Dijon mustard
- 1 tbsp minced fresh basil
- salt and pepper, to taste
- 2 oranges sections for garnish
- Basil leaves, for garnish

- Cut chicken into pieces. In a mixing bowl, combine orange juice, dry sherry, salad oil, ginger, garlic, mustard, basil, and salt and pepper. Add the chicken pieces to the bowl, and toss to coat. Cover, and refrigerate for 6 hours, turning occasionally.
- Drain chicken, reserving the liquid. Place pieces in a large shallow baking pan, and bake in a 400 degree F oven for 25 minutes. Drain off fat, pour reserved liquid over the chicken, and continue to bake, basting occasionally, about 25 minutes until chicken is browned.
- Place chicken on a serving platter, and drizzle pan juices over the chicken. Garnish with orange sections and basil leaves.
