Ka-u Orange-Ginger Chicken
This is the easiest and most delicious chicken recipe for those who want a sauce that reminds them of takeout Chinese food, but prefer to cook at home.
Instructions
  1. Cut chicken into pieces. In a mixing bowl, combine orange juice, dry sherry, salad oil, ginger, garlic, mustard, basil, and salt and pepper. Add the chicken pieces to the bowl, and toss to coat. Cover, and refrigerate for 6 hours, turning occasionally.
  2. Drain chicken, reserving the liquid. Place pieces in a large shallow baking pan, and bake in a 400 degree F oven for 25 minutes. Drain off fat, pour reserved liquid over the chicken, and continue to bake, basting occasionally, about 25 minutes until chicken is browned.
  3. Place chicken on a serving platter, and drizzle pan juices over the chicken. Garnish with orange sections and basil leaves.
