- 3 packages unflavored gelatin
- 1/3 cup water
- 1 cup sugar
- 2 cups grated moist coconut
- 1-1/2 pints whipping cream
- 1 tsp coconut extract

- Pour half and half in saucepan; bring just to a boil, dissolve gelatin in water; add with sugar to half and half and continue cooking until sugar is dissolved. Cool. Add coconut. Beat cream and coconut extract until stiff; fold into coconut mixture. Pour into 8-cup mold. Chill until firm.
