Coconut Mousse
This is delicious and very easy to make. Before serving, sprinkle on some confectioners' sugar for decoration.

  1. Pour half and half in saucepan; bring just to a boil, dissolve gelatin in water; add with sugar to half and half and continue cooking until sugar is dissolved. Cool. Add coconut. Beat cream and coconut extract until stiff; fold into coconut mixture. Pour into 8-cup mold. Chill until firm.
