If banana leaves aren't available then you could use baking paper or aluminum foil.

- 8 banana leaves (10 x 10 inches), or aluminum, foil
- 1-1/2 pounds prawns, peeled and deveined
- 1/2 cup coconut milk
- 4 tsp lime juice
- 1 tbsp honey
- 2 tsp sambal sauce
- 1/2 medium sweet onion, finely chopped
- 1 tsp minced gingerroot
- 2 lemongrass stalks minced
- 4 tsp fish sauce
- 6 basil leaves thinly sliced for garnish
- 4 tbsp chopped cilantro garnish
- 4 lime wedges for garnish

- Soak banana leaves in boiling water to soften. Drain, and clean with a damp cloth. Set aside.
- In a large bowl, combine remaining ingredients and marinate for 20 minutes. Divide into 4 equal portions, and place on 4 banana leaves. (more than 1 leaf will be needed for each packet, as they frequently need to be overlapped where they are torn.)
- Wrap securely, and fasten with a toothpick or bamboo skewer. Place packets in a steamer, and when the water boils, steam banana parcels for 20 minutes. Put the packets on four plates. Serve with the basil, cilantro, and lime wedges.
