If you love a nice piece of biscotti in the morning so try making something different. Make this macadamia biscotti using sweetened, dried papaya. Candied fruit is the perfect addition to any biscotti.

- 4 cups self rising flour, sifted
- 1-3/4 cups sugar
- 3 tbsp melted butter
- 1 cup candied papaya, small cubes
- Pinch of salt
- 1 cup Island Princess Hawaii Macadamia nuts, roughly chopped
- 1 tsp vanilla bean paste

Instructions
- Beat the eggs with sugar and vanilla. Add the flour, butter, salt, candied mango and macadamia nuts.
- Shape the dough with floured hands to form two logs and bake at 300 for 35 minutes. Cool at room temperature for 10 minutes. Slice into 1/2" pieces, reduce oven to 275 degrees and bake for another 10 minutes until crisp and golden.
- Note: be sure the candied papaya is in small enough cubes. If not, cut into smaller pieces.
