If you love a nice piece of biscotti in the morning so try making something different. Make this macadamia biscotti using sweetened, dried papaya. Candied fruit is the perfect addition to any biscotti.
Beat the eggs with sugar and vanilla. Add the flour, butter, salt, candied mango and macadamia nuts.
Shape the dough with floured hands to form two logs and bake at 300 for 35 minutes. Cool at room temperature for 10 minutes. Slice into 1/2" pieces, reduce oven to 275 degrees and bake for another 10 minutes until crisp and golden.
Note: be sure the candied papaya is in small enough cubes. If not, cut into smaller pieces.
