- 6 pounds beef rib bones
- 1 pound stew-cut beef, cubed
- 4 quarts cold water
- 2 onions sliced
- 2-inch piece gingerroot, sliced
- 3 cloves garlic, sliced
- 1 stalk lemongrass
- 1 stick cinnamom
- 1 tsp whole black peppercorns
- 3 tbsp fish sauce
- Salt to taste
- 6 ounces rice noodles, soaked 20 minutes in warm water and drained
- 1 pound seared tender beef, thinly sliced

- Put bones and stew -cut beef in a large pot. Add cold water to cover, then onions, ginger, garlic, lemongrass, cinnamon, and whole black peppercorns. Bring to a boil, turn heat very low, cover, and simmer for at least 5 hours. Add fish sauce and salt to taste.
- In a separate pot, heat 3 quarts water and bring to a rolling boil. Add the noodles. As soon as the water returns to a boil, drain, and portion noodles into bowls. Add the hot soup, and arrange the sliced beef on the top.
