Instructions
  1. Put bones and stew -cut beef in a large pot. Add cold water to cover, then onions, ginger, garlic, lemongrass, cinnamon, and whole black peppercorns. Bring to a boil, turn heat very low, cover, and simmer for at least 5 hours. Add fish sauce and salt to taste.
  2. In a separate pot, heat 3 quarts water and bring to a rolling boil. Add the noodles. As soon as the water returns to a boil, drain, and portion noodles into bowls. Add the hot soup, and arrange the sliced beef on the top.
