- 1 whole snapper about 3 pounds
- Salt and white pepper to taste
- 4 ounces fresh shiitake mushrooms, stems removed
- 1/4 cup very thinly slivered fresh gingerroot
- 1 bunch green onions, slivered
- 1 bunch cilantro, coarsely chopped
- 1/4 cup soy sauce
- 2/3 cup peanut oil
- 1 tbsp sesame oil
- Fresh cilantro for garnish

- Clean and scale the fish. Rinse and pat dry. Rub salt and white pepper on fish meat. Place fish in a large fish steamer, and scatter with shiitake mushrooms. Steam for about 15 to 20 minutes on medium heat. Garnish with the ginger, green onions, and cilantro.
- Pour the soy sauce over the fish. Heat peanut and sesame oils in a saucepan until they are smoking. Carefully drizzle the hot oil over the steamed fish, and garnish with the fresh cilantro. Serve immediately.
