- 1 pound boneless chicken breast
- 1 inch piece fresh gingerroot, crushed
- 4 cups chicken stock
- 2 cups water
- 1 medium onion, julienned
- 2 ounces rice noodles, soaked in warm water for 1 hour and cut into thirds
- Hawaiian or rock salt to taste
- 1/4 cup chopped green onions for garnish

- In a stockpot, combine chicken breast, ginger, chicken stock, water, and onion; simmer for 25 minutes. Remove the chicken breast and shred. Return the shredded chicken meat to the stock, and add rice noodles. Simmer for 10 minutes. Season with salt to taste. Garnish with green onions and serve.
