Chicken Long Rice
This is also a great winter comfort food and great for flu season. Serve over steamed rice.

Instructions
  1. In a stockpot, combine chicken breast, ginger, chicken stock, water, and onion; simmer for 25 minutes. Remove the chicken breast and shred. Return the shredded chicken meat to the stock, and add rice noodles. Simmer for 10 minutes. Season with salt to taste. Garnish with green onions and serve.
