Haupia is a traditional coconut milk-based Hawaiian dessert often found at luaus and other local gatherings in Hawaiʻi. Since World War II, it has become popular as a topping for white cake, especially at weddings.

- 1-1/2 cups coconut milk
- 1-1/2 cups milk (water can be substituted)
- 6 tbsp sugar
- 6 tbsp cornstarch

Instructions
- In a suacepan, combine coconut milk, milk, sugar, and cornstarch. Cook over medium heat, stirring frequently, until mixture thickens. Lower heat, and continue cooking for 10 more minutes. Taste to check that the cornstarch is cooked. It should have a smooth finish when put in your mouth. Pour into a square 8-inch baking pan. Chill. When firm, cut into small squares.
- Fresh tropical fruits can be diced and served with the haupia.
