- 5 pounds fresh aku or opihi
- 3 pounds chopped limu koho or manuea
- Hawaiian rock salt to taste
- 3-4 tbsp inamona (Kukui nut paste)

Instructions
- Remove skin from fish; cut fish into 1-inch cubes. Combine with remaining ingredients. Chill and serve. Note; Fresh swordfish, squid or octopus may be used. A Korean style poke may be prepared using 3 to 5 seeded chopped Hawaiian chili peppers, 1 bunch green onion chopped, 2 tablespoons toasted sesame seeds, 1 tablespoon sesame oil and 2 tablespoons shoyu (soy) sauce.
