This easy, dressed-up chicken has its roots in North African cooking, but has found it's way into Hawaiian kitchens. Its delicious flavorful warmth comes from cinnamon, turmeric, and chili powder.

- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- salt and pepper, to taste
- 4 chicken breasts boneless (skin on)
- 2 tbsp vegetable oil
- 3/4 cup chopped onion
- Sliced green onions (optional)
- 2 cloves minced garlic
- 3/4 cup orange juice
- 2 tbsp sugar
- 2 tbsp raisins
- 1 tbsp capers, drained and rinsed

- In a large bowl, combine cinnamon, cloves, and salt and pepper to taste. Add chicken breasts, and rub evenly to coat.
- Heat the oil in a saute' pan. Cook chicken breasts skin-side down for 3 to 4 minutes. Add onion, green onions, garlic, and ginger. Flip chicken over, and cook an additional 3 to 4 minutes. Drain off excess oil. Add orange juice, sugar, raisins, and capers. Reduce heat and simmer approximately 10 minutes. Serve with hot rice.
