This garlic mayonnaise is excellent with fish. Serve with grilled salmon, deep fried cod, or baked bass; it is good with these recipes and so many more.

- 1 tsp Dijon mustard
- 1 tsp minced garlic
- 1 tbsp freshly squeezed lemon juice
- 1 cup olive oil
- salt and pepper, to taste

- In a blender, combine the mustard, garlic, egg, egg yolk, and lemon juice and puree'. With the machine running, slowly add the olive oil until incorporated. If the mixture becomes too thick, thin with a little water. Season with salt and pepper. Keep refrigerated.
