Chicken katsu is a yummy Japanese dish which is also popular in Hawaii. It consists of a breaded, deep-fried chicken cutlet one to two centimeters thick that is sliced into bite-sized pieces or strips. A butterflied chicken thigh is generally used.

Instructions
  1. Remove skin and bones from chicken breasts; sprinkle chicken with salt.
  2. Dredge in flour, dip in eggs, and coat with panko.
  3. Heat oil in electric skillet to 375 degrees F.
  4. Fry chicken until golden brown; drain on absorbent paper.
  5. Combine remaining ingredients.
  6. Serve with chicken. Makes 6 servings.
