- 3 tbsp lemon juice
- 3 tbsp vegetable oil
- 1 tsp Dijon mustard
- Salt and freshly ground pepper to taste
- 8 4 ounces each ono, wahoo, or sea mackerel fillets
- Butterhead lettuce leaves
- Twisted Tarter Sauce

- In a small mixing bowl, combine lemon juice, oil, mustard, and salt and pepper to taste. Add ono, and marinate for 30 minutes. Grill fish for 3 to 4 minutes, leaving the middle pink. (The fish will continue to cook through even after it is removed from the fire.) Remove from the heat.
- Serve with hot rice, and Twisted Tarter Sauce on the side.
