  1. Cut the top from the pumpkin in a star shape. Remove and discard seeds. Dry pumpkin inside with paper towels.
  2. Mix cornstarch with sugar, then pour in the coconut milk. Mix well. Add the eggs and vanilla; blend well.
  3. Pour mixture into pumpkin shell, replace lid, and steam in a large steamer for 1 hour or until custard sets. Refrigerate until ready to use.
