Cut wings apart at joints, discarding tips. Fry wings in oil in 5-quart Dutch oven or saucepot, stirring constantly for about 7 minutes. Reduce heat to medium; add shoyu (soy) sauce, sherry, ketchup, sugar and ginger root, stirring to blend well. Cook, covered, for about 25 minutes, stirring occasionally. Remove cover and cook for additional 10 minutes, stirring frequently, until all liquid is absorbed. Chill, covered, to serve cold on shredded lettuce or serve warm. Drumsticks may be prepared a day in advance and stored in refrigerator.
