This recipe bursts with lemon along with soy sauce.  It all starts with chicken thighs that we marinate in soy sauce and sherry make your chicken tender and yummy. We coat it and sear it in a hot pan, creating a golden brown crust. After that, we create a delicious sauce to pour over your chicken. What taste's better than lemon chicken with gravy.  Nothing.

Instructions
  1. In large bowl, combine the chicken with the sherry, soy sauce and 1/2 teaspoon of the salt; let stand for 15 minutes.
  2. In small bowl, beat eggs; beat in the 1/4 cup cornstarch and the baking powder to form smooth batter.
  3. In wok or large skillet, heat the 2 cups oil to 350 degrees F.
  4. Coat chicken with batter; fry until browned.
  5. Cut into 1 1/2 X 1 inch pieces.
  6. Combine sugar, the one tablespoon cornstarch, broth, lemon juice and remaining 1 teaspoon salt.
  7. Cut lemon into thin slices.
  8. In wok or skillet, heat the two tablespoons oil; add lemon slices and stir fry for 30 seconds.
  9. Slowly stir in cornstarch mixture.
  10. Cook, stirring constantly, until sauce is clear.
  11. Pour over chicken.
  12. Makes six servings.
