  1. Wash luau thoroughly; remove stems and fibrous parts of veins.
  2. Place wash leaves in large saucepan; add water.
  3. Bring to a boil, lower heat, and simmer for one hour, stirring frequently.
  4. Drain luau thoroughly; stir in coconut milk, salt and chicken or squid.
  5. Heat but do not boil. Makes six servings.
  6. To prepare chicken for luau:
  7. Bone two pounds chicken thighs; cut meat into small pieces.
  8. Saute chicken in two tablespoons butter or margarine.
  9. Cover and simmer 15 to 20 minutes.
  10. To prepare squid for luau:
  11. cut 1 1/2 lb. cooked squid or octopus into thin crosswise slices.
