Caramelized Maui Onion Tart
A rich creamy sweet onion tart. Absolutely wonderful!

Instructions
  1. In a heavy skillet over medium heat, cook the bacon until golden, about 8 minutes. Reduce the heat to low and add the butter and onions. Saute' until the onions are brown and caramelized, about 1 hour. Season with white pepper. (At this point you can cover and chill the filling up to a day ahead.)
  2. Roll out the pastry sheet to 13 inches square. Fit the pastry into an 11 inch tart pan with removable bottom. Trim the excess dough. Freeze the pastry for 30 minutes. Preheat the oven to 425 degrees F. Fill the crust with the onion mixture. Bake until the crust is golden, about 25 minutes. Cool slightly and serve.
