Ingredients
- 3 quarts water
- 8 ounces salt
- 2 pinches curling salt
- 3 tbsp sugar
- 1 tbsp peppercorns
- 2 sprigs thyme
- 1/2 tbsp cloves
- 1 lb flap meat or skirt steak, trimmed
- Pepper to taste

Instructions
- In a stockpot, bring the water, salt, sugar, bay leaves, peppercorns, thyme, and cloves to a boil. Remove from the heat and let cool. Chill the curing brine in the refrigerator. Add the meat and marinate in the refrigerator for 24 hours.
- Preheat the oven to 500 degrees.
- Remove the meat, pat dry, and season liberally with pepper. Place in a roasting pan and roast for 30 minutes, or until well done. Alternatively, grill the meat for 10 minutes on each side and then roast for 15 minutes.
