This sauce is easy to make and is very versatile. Use it on salads, grilled meats, grilled fish hot or cold, vegetables hot or cold, pasta and warm pasta salads.

- 1 5-ounce tomato at room temperature, cored, seeded, and chopped
- 1/2 tbsp minced garlic
- 1-1/2 tbsp Chile Water
- 1/4 cup olive oil
- Salt to taste

Instructions
- To prepare the Tomato-Chile Pepper Vinaigrette, in a blender, combine the tomato, garlic and Chile Pepper Water and puree' until smooth. With the machine running slowly add the oil until incorporated. Season with salt. Refrigerate until needed.
