Instructions
  1. Dissolve yeast in potato water.
  2. Stir in the 3 tablespoons sugar, potatoes and ginger.
  3. Cover; let rise until doubled.
  4. Scald milk; add salt and cool to lukewarm.
  5. In small bowl of electric mixer, beat eggs;
  6. Gradually beat in the 1 3/4 cups sugar.
  7. Stir into yeast mixture.
  8. Add butter and mix well.
  9. Stir in 2 cups of the flour, then milk.
  10. Add 2 more cups of the flour; beat 5 minutes.
  11. Stir in enough remaining flour to make a stiff dough.
  12. Place on lightly floured board and knead int remaining flour until dough is smooth and elastic, about 8 to 10 minutes.
  13. Place in greased bowl, turning in grease top.
  14. Cover; let rise until doubled.
  15. Grease four 9 X 5 X 3-inch loaf pans.
  16. On a lightly floured board, divide dough into fourths.
  17. Shape each fourth into a loaf; place in prepared pans.
  18. Cover; let rise until doubled.
  19. Preheat electric oven to 325 degrees F.
  20. Bake for 45 minutes or until done.
